In a 9x13 pan, season pork loin and place fat side up.
Bake at 325° F for 90 minutes and check internal temperature with a meat thermometer. Center needs to be 165° F. If you need to continue cooking, turn oven down to 300° F.
Allow to cool, then refridgerate overnight. It cuts better when cold.
Slice into pieces no more than 1/4 inch thick. The thinner the better.
Stack in a crock pot, adding BBQ sauce as you fill.
Cook on low for 6+ hours, with the lid on.
If you have space in the crock pot, add 1 can of green beans.
